Momma Says “Red Meat and Chocolate!”

I may officially be turning into my mother. When we used to go on mini-vacations {every other month or so} our treat to each other would be red meat and chocolate… Tonight, that is exactly what I wanted! And, let me tell you, that is exactly what I got! Now, my mother and I differ on how we like our meat cooked. She will send a steak back if it even remotely “moo’s” at her … I on the other hand, like it to “moo” at me, I just don’t want it to run off the plate!



You’re viewing the best meal I’ve cooked in months!! Medium-Rare Filet {ok, the foodie bf grilled that for me}, creamed spinach, and garlic whipped potatoes. And, yes… I’m too lazy to wash wine glasses, so those are good ol’ juice glasses. Wine tastes the same no matter what glass it comes in!  And, further back is a nice basket of warm french bread. Who’s a good domestic goddess? Yes, that would be me! And, to top it all off .. I’ve got brownies baking in the oven with some Vanilla-Bean Ice Cream in the freezer waiting to be added to the bowl! Goodness… I deserve and award tonight! {ha ha}


Anyhow, I hope you all are enjoying your weekend. I have to tell you, it is so nice to relax and be lazy and enjoy this beautiful weather we are having right now. I can only hope that full-spring gets here soon, soon, soon! I’m ready to put the top down, put some big sunglasses on, turn the girly music up, and sing at the top of my lungs!! Night ya’ll

Heaven in a Mug … {Warm Bliss}

My night is complete. Hot chocolate {real marshmallows}, a book, and John Mayer playing in the background. I’m a happy woman right now. Funny how something like hot chocolate {which reminds me of childhood and Christmas} can make you feel so warm and relaxed … mmmm, heaven. Goodnight Ya’ll!

Chocolate Chip Cheese Ball {Picture Tutorial}

Sweet. Chocolate. Cheesy. Goodness.


I had been waiting for an opportunity to make a Chocolate Chip Cheese Ball, and visiting my family and cooking them a ‘Second Christmas Dinner’ was just the opportunity! I made it early in the afternoon, chilled it, and served it while everyone was chatting and waiting around for me to emerge from the kitchen. And, it was perfect for me to make with my new mixer! Of course, I brought my camera with me … and had it in hand for a picture tutorial. So, here we go:


Chocolate Chip Cheese Ball

{Help yourself appetizer type dish. Serves plenty}


You will need:

One 8 oz package of cream cheese

1/2 cup butter softened

1/4 tsp vanilla

2 TBSP brown sugar

3/4 cup confectioners sugar

3/4 cup {or a bit more} mini chocolate chips

Graham Cracker sticks or pieces


And, here’s what you do:

1. With your wonderful mixer that Santa just brought you for Christmas, mix the softened {room temperature} cream cheese with the butter and vanilla.

2. Slowly add in the brown sugar and confectioners sugar.

3. Fold in the chocolate chips.

4. Mold into a ball by rolling mixture in saran wrap … or line a bowl with saran and smush the mixture in to take form of the bowl.

5. Chill for at least an hour before serving with Graham Cracker sticks or pieces.


Simple. Easy. Delicious. I could easily sit down and eat this whole thing by myself. You know the food is good when you serve something to a ‘chatty’ room and you hear the hush come across the house. The sound of satisfied, full mouths! As always, I’d love to hear all about it if you make it! Enjoy!

Duck, Duck, Dinner

Time management may not be my best skill.  While visiting my family, I thought one of the best ‘presents’ I could give them would be to make a few meals while I’m here. The premise: I enjoy it and they will love {hopefully} eating it. However, undertaking a meal of Holiday proportion and timing everything exactly right may take a little more practice on my part. I started this morning around 11 am and made a tray of my Bacon, Egg and Toast Pods. They turned out really well, and got rave reviews. I’ve said it once before… but I’ll say it again… ah’mazing, easy, and a big hit!


After a quick shower and trip to Target, it was back to cooking. Washing and boiling spinach, cleaning a duck, mixing a sweet potato souffle, and chilling a cream cheese chocolate ball. …{backtrack, I said cleaning a duck! Just picture that for a second}… I did pretty well getting everything prepared and got about an hour break before it was time to get the duck in the oven. Two hours of gracefully dancing around the kitchen, followed by an hour-long mad dash at the end… we have dinner:

The meal turned out fantastic. And, my family {who had not previously tired duck, or had it in the last few years} gobbled up a whole 6 pound duck. Go me! Back up, or I’ll burn you with my heating pad!

Christmas is fast approaching, and I have not a single thing done. I feel like I need to be whipping out a sewing machine or baking up a storm. The baking part may be exactly what I do to make up for the fact that we are in “the greatest economic crisis since the great depression” {snooze} and I have little to no money to spend on lavish presents for my big and ever-growing circle of family and friends. Besides, Christmas really isn’t about the presents. I’m learning in my old age that Christmas really is about being with the people you love and sharing in the spirit of the holiday. And, the ones who understand that will certainly admire my creative gifting!


{ok, enough of the Christmas high horse} … Let’s talk about how much pain I’m in today. This morning, while playing with the dog, I seem to have done something to my neck. Can’t bend it backwards or to the left. Sharp shooting pain. Oh, the joy. I took a few Motrin and got a warm compress and laid down on the bed and fell asleep. The heat felt so nice and in combination with the Motrin – I was out. I really didn’t think the compress was that hot. It’s one of those clay ones that you put in the microwave for a minute and a half, and then put inside a fabric sleeve. apparently, it was too hot though, because I woke up with what looks like a trail of hickeys running down the side of my neck. I guess I burned myself – or came close to it … {yes, stamp stupid on my forehead} … No, it doesn’t hurt. I didn’t even know it was there until I went to take a shower later on. And, no it didn’t hurt or burn when the hot shower water was on it in the shower – so I guess it can’t be that bad – just looks a little rough! {only me} It did get me out of cooking dinner though! The boyfriend felt so sorry for my poor pathetic self that he went and picked up some dinner. {Brunswick Stew and French Bread followed by Cranberry Apple Pie} What a nice evening!

It’s great – don’t get me wrong – but I wouldn’t recommend heating it up and falling asleep with hot clay wrapped around your neck! See the insides:
